Cranberry Banana Muffin

Buttermilk Berry Muffins:
All-purpose flour 2 1/2 cups (325 grams)
White sugar 3/4 cup (150 grams)
Baking powder 2 tsp
Baking soda 1/2 tsp
Salt 1/4 tsp
Zest of one orange or lemon
1 large egg, lightly beaten
Buttermilk 3/4 cup (180 ml) => 1 cup milk + 1 tbsp vinegar, set aside for 5-10 mins
Canola oil 2/3 cup (160 ml) => 80 mil oil + ripe banana to 2/3 cup (substitute with yoghurt should be another good option)
Vanilla 1 tsp
Fresh or frozen berries 1 1/2 to 2 cups (If use frozen ones, do not defrost it, use kitchen tower to dry excess water)

Directions:
1) Whisk together the egg, buttermilk, oil, and vanilla extract.
2) Combine the flour, sugar, baking powder, baking soda, salt, and orange zest
3) Fold in berries
4) Using fork, fold in wet ingredients into dry ingredients just to combine...otherwise tough muffins will result
5) Spoon batter into muffin tins, almost full....will get 6 muffins
6) Transfer to oven (preheated at 180C), bake for 20 minutes or until toothpic comes out clean on middle rack
